Loaded Baked Sweet Potatoes

I made these loaded baked sweet potatoes today, YUMMY!!! Gluten Free too!!! These make a great meal all in one.. :)




Ingredients:

Sweet Potatoes
Thin Steaks
Bell Peppers
Broccoli
Garlic
Shredded Cheese
Yellow Squash
Extra Virgin Cold Pressed Coconut Oil
Extra Virgin Olive Oil
Green Onions
Greek Yogurt Sour Cream

Preheat the oven to 400°. Wash and cut sweet potatoes in half onto a cookie sheet sprinkled with the olive oil then sprinkle olive oil onto the other side of the sweet potatoes. Sprinkle with garlic salt and steak seasoning. Cook for about 45 min.

While the sweet potatoes are cooking slice up the veggies and sautee in the coconut oil. Season and cook the thin steaks. 

Once the sweet potatoes are tender, take out of the oven and put a slice of butter or olive oil on top, top with the sauteed veggies, thin sliced steak, shredded cheese and greek yogurt sour cream.

ENJOY!!!!

Side note: we seasoned, tenderized and bbq'ed our steaks then sliced into strips.
